Sushi
Ingredients
- 1 cup rice
- 1 1/2 cups water
- rice vinegar
- sugar
- salt
- filling, eg salmon, avocado, carrot, cucumber, sprouts, chicken, tuna
Method
- Microwave rice and water for 10-15 minutes, stirring after 5 minutes. Stand for 10 minutes, then tip into a large flat dish to cool
- Mix 1/4 cup rice vinegar with 2 teaspoons of sugar and 1 teaspoon salt, heat until dissolved, and sprinkle half the mixture over the rice. Mix in with a wooden spoon, and fan rice until cool
- Place nori sheets shiny side down. Dip hands into remaining mixture, then pat rice onto nori sheets, leaving a clear space at the top
- Place filling along the sheet, about 1/3 up from the bottom
- Roll sushi, dampening nori with rice vinegar mixture before sealing
- Put finished rolls into the fridge to harden before cutting into slices. Dip knife in rice vinegar mixture to clean between cuts
