Asparagus
Ingredients
- 1 bunch of asparagus (about 1 pound)
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons freshly grated Parmesan cheese
- 1 teaspoon lemon zest
- salt and pepper
Method
- Rinse asaragus thoroughly, breaking off tough portions from the bottom
- Cut into 1-2 cm portions, on a slight diagonal
- Add to a pan of boling water, then simmer for 2 minutes
- Drain, and add other ingredients while hot

Serve warm or at room temperature
