Fruit Salad Jam

Ingredients

  • 1 pound dried apricots
  • 1 tin crushed pineapple
  • 6 large bananas
  • 2 large oranges
  • 2 lemons
  • 3 passionfruit (or 1 small jar)
  • 6 pounds sugar

Method

  1. Cut apricots into small pieces, then soak in one quart of water for 24 hours
  2. Add pineapple and boil for 10 minutes
  3. Add orange juice and pulp, and lemon juice and pulp, and passionfruit
  4. Boil for 10-15 minutes
  5. Add sliced bananas, and boil for another 5-10 minutes until the jam setting point is reached
  6. Pour into hot jars and cover with jam covers or sterilized lids
