Fruit Salad Jam
Ingredients
- 1 pound dried apricots
- 1 tin crushed pineapple
- 6 large bananas
- 2 large oranges
- 2 lemons
- 3 passionfruit (or 1 small jar)
- 6 pounds sugar
Method
- Cut apricots into small pieces, then soak in one quart of water for 24 hours
- Add pineapple and boil for 10 minutes
- Add orange juice and pulp, and lemon juice and pulp, and passionfruit
- Boil for 10-15 minutes
- Add sliced bananas, and boil for another 5-10 minutes until the jam setting point is reached
- Pour into hot jars and cover with jam covers or sterilized lids
