Christmas Pudding

Ingredients

  • 9 oz butter
  • 9 oz brown sugar
  • 15 oz flour
  • 1 1/2 pounds sultanas
  • 1 1/2 pounds currants
  • 1 teaspoon mixed spice
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons milk
  • 6 eggs
  • pinch salt

Method

  1. Cream butter and sugar
  2. Beat in eggs one at a time
  3. Add sifted flour, salt and mixed spice
  4. Dissolve soda in the milk, and mix in
  5. Stir in fruit
  6. Spoon into a pudding basin
  7. Put into a saucepan, with boiling water to 3/4 of the way up the sides of the basin
  8. Boil for 3 hours, keeping the water topped up
