Christmas Cake
Ingredients
- 1 pound butter
- 1 pound sugar
- 2 pounds flour
- 3 teaspoons baking powder
- 1 pound sultanas
- 1 pound currant
- 3/4 pound candied peel
- 8 eggs
- 1 cup brandy
- 1 teaspoon mixed spice
- 2 teaspoons mace
- 2 teaspoons vanilla essence
- 1/2 teaspoon salt
- milk
Method
- Soak fruit in brandy, salt and spices, preferably overnight
- Cream butter and sugar
- Add eggs one at a time
- Sprinkle over sifted flour and baking powder
- Top with fruit, and mix
- Add a little milk if needed to make a batter consistency
- Bake at 150 degrees C for 3-4 hours, in a well papered and greased 8 inch square tin
