Corn Fritters

Ingredients

  • 400g can whole-kernel corn
  • 1 egg
  • 1 cup flour
  • 2 teaspoons baking powder

Method

  1. Drain corn, reserving liquid
  2. Mix egg and corn in a bowl
  3. Add 1/4 cup of liquid
  4. Add flour and baking powder; stir
  5. Add more liquid if needed to make a dropping batter
  6. Heat oil (about 1cm deep), then drop in spoonfuls of batter
  7. Cook until golden brown

Notes

Can add onion, parsley or capsicum for more flavour
