Corn Fritters
Ingredients
- 400g can whole-kernel corn
- 1 egg
- 1 cup flour
- 2 teaspoons baking powder
Method
- Drain corn, reserving liquid
- Mix egg and corn in a bowl
- Add 1/4 cup of liquid
- Add flour and baking powder; stir
- Add more liquid if needed to make a dropping batter
- Heat oil (about 1cm deep), then drop in spoonfuls of batter
- Cook until golden brown
Notes
Can add onion, parsley or capsicum for more flavour
