Spiced Sugar-Glazed Corned Beef
Ingredients
- 1.5-2kg piece of corned beef with a good fat layer
- 1 onion, peeled and halved
- 2 carrots, washed and chopped
- 1 bay leaf
- 1 tablespoon whole cloves
- 1/2 cup brown sugar
- 1 teaspoon mustard powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- juice of 1 lemon
Method
- Turn a slow cooker onto low to pre-warm, then add the corned beef
- Scatter the onion, carrots and bay leaf around the meat
- Add enough cold water to cover, then cover with the lid and cook on low for 7-9 hours (otherwise, place all ingredients into a large suacepan and simmer for 1 1/2-2 hours)
- Turn off slow cooker, and leave to cool in the liquid for 2-3 hours (wrap and refrigerate overnight if required)
- Preheat the oven to 180deg C
- Line a deep-sided baking tray with foil
- Place the meat on the tray, then stud with the whole cloves
- Mix brown sugar, mustard, cinnamon and allspice with the lemon juice
- Spread half the mixture over the beef
- Bake for 1 hour, basting occasionally with the remaining glaze
- Serve with your favourite veges
