Blueberry Sour Cream Cake
Ingredients
- 1 cup flour
- ½ cup sugar
- ½ cup softened butter
- 1½ tsp baking powder
- 1 egg
- 1 tsp vanilla essence
- 3 cups blueberries
- 2 cups sour cream
- 2 egg yolks
- ½ cup sugar
- 1 tsp vanilla essence
Method
- Combine flour, sugar, butter, baking powder, egg and vanilla essence; mix thoroughly and spread into a greased 250mm loose bottom baking pan.
- Sprinkle blueberries evenly over the mixture.
- Combine sour cream, egg yolks, sugar and vanilla essence, and mix together well. Pour over the berries.
- Bake for 1 hour at 180ºC or until custard topping is firm and lightly browned. If using a fan oven bake at 170ºC for a little less time
