Blueberry Sour Cream Cake

Ingredients

  • 1 cup flour
  • ½ cup sugar
  • ½ cup softened butter
  • 1½ tsp baking powder
  • 1 egg
  • 1 tsp vanilla essence
  • 3 cups blueberries
  • 2 cups sour cream
  • 2 egg yolks
  • ½ cup sugar
  • 1 tsp vanilla essence

Method

  1. Combine flour, sugar, butter, baking powder, egg and vanilla essence; mix thoroughly and spread into a greased 250mm loose bottom baking pan.
  2. Sprinkle blueberries evenly over the mixture.
  3. Combine sour cream, egg yolks, sugar and vanilla essence, and mix together well. Pour over the berries.
  4. Bake for 1 hour at 180ºC or until custard topping is firm and lightly browned. If using a fan oven bake at 170ºC for a little less time
