Mustard Creme Fraiche Chicken

Ingredients

  • 4-5 chicken breasts
  • 250g tub creme fraiche
  • 2 tablespoons wholegrain mustard
  • 1 teaspoon dried tarragon
  • 250g punnet cherry tomatoes
  • 2-4 chopped bacon rashers
  • few sundried tomatoes
  • black pepper

Method

  1. Place chicken, chopped into bite-sized pieces if liked, into a deep dish
  2. Mix mustard and tarragon into the tub of creme fraiche
  3. Spoon over chicken
  4. Scatter over halved tomatoes
  5. Top with bacon rashers and sundried tomatoes
  6. Season with ground pepper
  7. Fan bake at 180 deg C for 30 minutes

Nice served with baked potatoes
