Walnut Carrot Cake
Ingredients
- 3 cups finely grated carrot
- 1 cup chopped walnuts
- 4 eggs
- 2 cups flour
- 2 cups caster sugar
- 1 1/4 cups oil
- 2 teaspoons baking soda
- 2 teaspoons mixed spice
- pinch salt
Method
- Combine all ingredients and beat until smooth
- Pour into a well-greased and lined tin
- Bake at 180 deg C for 1 hour
Notes
Cream cheese icing: beat 125g cream cheese, 50g butter and 2 cups of icing sugar and spread over the cake
