Tora Walk Sweet & Sour Onion Salad
Ingredients
- 450g baby onions, peeled
- 50ml (1/4 cup) white vinegar
- 45ml (3 tablespoons) olive oil
- 40g (3 tablespoons) caster sugar
- 1 bay leaf
- 2 parsley sprigs
- 65g (1/2 cup) raisins
- salt & pepper
Method
- Put all into a pan with 300ml of water
- Bring to the boil, then simmer gently for 45 minutes (onions will be more tender if the pan is covered)
- Remove bay leaf and parsley
- Serve at room temperature
Notes
Can add roasted kumara pieces once onions are cooked
