Tora Walk Sweet & Sour Onion Salad

Ingredients

  • 450g baby onions, peeled
  • 50ml (1/4 cup) white vinegar
  • 45ml (3 tablespoons) olive oil
  • 40g (3 tablespoons) caster sugar
  • 1 bay leaf
  • 2 parsley sprigs
  • 65g (1/2 cup) raisins
  • salt & pepper

Method

  1. Put all into a pan with 300ml of water
  2. Bring to the boil, then simmer gently for 45 minutes (onions will be more tender if the pan is covered)
  3. Remove bay leaf and parsley
  4. Serve at room temperature

Notes

Can add roasted kumara pieces once onions are cooked
