Spinach and Salmon Loaf

Ingredients

  • 9 spinach leaves
  • 2 x 220g cans of salmon
  • 3 eggs
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1/3 cup stale breadcrumbs
  • 2 tablespoons grated parmesan cheese

Method

  1. Rinse spinach under water; cut away stalks
  2. Place spinach in a bowl; cover and microwave on High for 1 minute
  3. Line a lightly greased ovenproof dish with 3/4 of the spinach, overlapping the sides
  4. Chop remaining spinach, squeeze out moisture
  5. Combine eggs, milk, salmon, lemon juice, bread crumbs and cheese; stir in spinach
  6. Spoon mixture into spinach-lined dish; enclose filling by overlapping spinach leaves
  7. Cover, the microwave on High for 13 minutes until cooked
  8. Stand for 5 minutes before turning out
