Fish Tortillas
Ingredients
- 4 firm white fish steaks (e.g. warehou)
Marinade:
- 1/4 cup fresh cilantro, finely chopped
- 1/2 cup, plus 1 tbsp olive oil
- 3 1/2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 2 tsp cumin
- 1 tsp paprika
- 1/2 teaspoon red pepper flakes
- 1tsp sea salt
- 1tsp black pepper
Red Cabbage Slaw:
- 1/4 cup rice or apple cider vinegar
- 1 tablespoon sugar
- 2 tablespoons olive oil
- 1/4 head red cabbage, finely shredded
- 1 large carrot, grated
- 1/4 cup each, chopped parsley and coriander
Salt and pepper
Tortillas
Avocado
Tomato
Sour Cream
Method
Mix all marinade ingredients together in a large bowl. Add fish and turn to coat. Marinate fish for 15 mins and then grill or fry (7-10mins depending on thickness)
Combine all coleslaw ingredients in a bowl. Season with salt and pepper, to taste.
Serve fish and slaw in warmed tortillas with avocado, tomato and sour cream
