Dark Chocolate Mudcakes
Ingredients
- 60g dark eating chocolate
- 2/3 cup boiling water
- 1 cup firmly packed brown sugar
- 90g soft butter
- 2 eggs
- 2/3 cup self-raising flour
- 2 heaped tablespoons cocoa
Method
- Heat oven to 180 deg C (not fanbake)
- Break chocolate into pieces; mix with boiling water until smooth.
- Beat sugar, butter and eggs together in a bowl, with an electric beater
- Stir in sifted flour and cocoa
- Add chocolate mixture; stir until combined
- Half-fill cupcake cases with mixture
- Bake for about 25 minutes
- Decorate as desired
Notes
For mocha: add 1 heaped teaspoonful of good-quality instant coffee to the chocolate and water mixture For berry, add 1 cup of berries to the mixture at the end For vanilla buttercream icing, beat 190g of icing sugar with 125g of (pref. unsalted) butter until smooth and creamy; mix in 1/2 teaspoon vanilla essence and 1-2 tablespoons of cream to make a soft consistency, ready for spreading or piping
