Dark Chocolate Mudcakes

Ingredients

  • 60g dark eating chocolate
  • 2/3 cup boiling water
  • 1 cup firmly packed brown sugar
  • 90g soft butter
  • 2 eggs
  • 2/3 cup self-raising flour
  • 2 heaped tablespoons cocoa

Method

  1. Heat oven to 180 deg C (not fanbake)
  2. Break chocolate into pieces; mix with boiling water until smooth.
  3. Beat sugar, butter and eggs together in a bowl, with an electric beater
  4. Stir in sifted flour and cocoa
  5. Add chocolate mixture; stir until combined
  6. Half-fill cupcake cases with mixture
  7. Bake for about 25 minutes
  8. Decorate as desired

Notes

For mocha: add 1 heaped teaspoonful of good-quality instant coffee to the chocolate and water mixture For berry, add 1 cup of berries to the mixture at the end For vanilla buttercream icing, beat 190g of icing sugar with 125g of (pref. unsalted) butter until smooth and creamy; mix in 1/2 teaspoon vanilla essence and 1-2 tablespoons of cream to make a soft consistency, ready for spreading or piping
