Black Midnight Cake

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 3/4 cup cocoa
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 1 cup black coffee (1 teaspoon coffee powder dissolved in a little hot water, then topped up with cold water)

Method

  1. Sift flour, sugar, baking soda, baking powder, cocoa and salt together.
  2. Add remaining ingredients in the order given, mixing between each addition.
  3. Pour into a lined, 10 inch cake tin.
  4. Bake at 180 deg C for 45-50 minutes
  5. Ice with ganache: 1/3 packet dark chocolate buttons, melted with 1/3 c cream; let cool until thickish before spreading over cake)
