Unbaked Lemon Slice

Ingredients

  • 150g butter
  • 1 395g can condensed milk
  • 2 x 250g packets milk arrowroot biscuits
  • 1 cup dessicated coconut
  • zest of 2 lemons
  • juice of 1 lemon, about 4 tablespoons
  • 2 cups icing sugar
  • 25 g butter, melted

Method

  1. Line a 30x20cm slice tray with baking paper
  2. In a large glass bowl, microwave butter for about 40 seconds until melted
  3. Stir in condensed milk
  4. Place one packet of biscuits in a food processor, add coconut, and process until fine; add to bowl
  5. Process the second packet of biscuits, but leave larger chunks; add to bowl
  6. Add zest of 1 lemon and 2 tablespoons of lemon juice; mix well
  7. Press into slice tin, flattening out evenly. Refrigerate while preparing icing
  8. Mix melted butter and icing sugar with zest of 1 lemon and about 2 tablespoons of lemon juice, to make a smooth icing
  9. Spread over slice for at least 3 hours
  10. Once set, cut into pieces

Notes

Store in an airtight container in the refrigerator for up to a week.
