Unbaked Lemon Slice
Ingredients
- 150g butter
- 1 395g can condensed milk
- 2 x 250g packets milk arrowroot biscuits
- 1 cup dessicated coconut
- zest of 2 lemons
- juice of 1 lemon, about 4 tablespoons
- 2 cups icing sugar
- 25 g butter, melted
Method
- Line a 30x20cm slice tray with baking paper
- In a large glass bowl, microwave butter for about 40 seconds until melted
- Stir in condensed milk
- Place one packet of biscuits in a food processor, add coconut, and process until fine; add to bowl
- Process the second packet of biscuits, but leave larger chunks; add to bowl
- Add zest of 1 lemon and 2 tablespoons of lemon juice; mix well
- Press into slice tin, flattening out evenly. Refrigerate while preparing icing
- Mix melted butter and icing sugar with zest of 1 lemon and about 2 tablespoons of lemon juice, to make a smooth icing
- Spread over slice for at least 3 hours
- Once set, cut into pieces

Store in an airtight container in the refrigerator for up to a week.
