Spaghetti Bolognese
Ingredients
- 1 tablespoon olive oil
- 1 onion, finely diced
- 2 carrots, finely diced
- 2 celery sticks, finely diced
- 1 tablespoon crushed garlic
- 500g beef mince
- 3 tablespoons tomato paste
- 1 tablespoon Italian herbs
- 1 400g can crushed tomatoes
- 1 OXO cube
- 1/2 cup boiling water
- 500g spaghetti, cooked
- grated parmesan
Method
- Heat oil in a large frying pan over medium heat, and cook onion, carrot and celery for about 5 minutes, stirring frequently
- Stir in garlic, then add mince, breaking up with a wooden spoon. Cook for 5 minutes until browned.
- Stir in tomato paste, then Italian herbs
- Mix OXO cube with boiling water, then add to the pan with the tomatoes
- Simmer over a low heat for 10-15 minutes, stirring occasionally, until the liquid has reduced and the sauce has thickened up. Season with salt & pepper.
- Arrange the spaghetti in the bottom of a large bowl, and top with parmesan. Grate parmesan over the dish and serve immediately
Notes
Can use half a cup of beef stock instead of the OXO cube and boiling water.
