Spaghetti Bolognese

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely diced
  • 2 carrots, finely diced
  • 2 celery sticks, finely diced
  • 1 tablespoon crushed garlic
  • 500g beef mince
  • 3 tablespoons tomato paste
  • 1 tablespoon Italian herbs
  • 1 400g can crushed tomatoes
  • 1 OXO cube
  • 1/2 cup boiling water
  • 500g spaghetti, cooked
  • grated parmesan

Method

  1. Heat oil in a large frying pan over medium heat, and cook onion, carrot and celery for about 5 minutes, stirring frequently
  2. Stir in garlic, then add mince, breaking up with a wooden spoon. Cook for 5 minutes until browned.
  3. Stir in tomato paste, then Italian herbs
  4. Mix OXO cube with boiling water, then add to the pan with the tomatoes
  5. Simmer over a low heat for 10-15 minutes, stirring occasionally, until the liquid has reduced and the sauce has thickened up. Season with salt & pepper.
  6. Arrange the spaghetti in the bottom of a large bowl, and top with parmesan. Grate parmesan over the dish and serve immediately

Notes

Can use half a cup of beef stock instead of the OXO cube and boiling water.
