One Pot Mince and Pasta
Ingredients
- 1 tablespoon olive oil
- 500g beef mince
- 1 onion, diced
- 1 handful baby spinach (optional)
- 3 cloves garlic, crushed
- 1 tablespoon Italian herbs
- 1/2 teaspoon chilli flakes (optional)
- 1 tablespoon tomato paste
- 400g can crushed tomatoes
- 2 cups beef stock
- 1 cup milk
- 2 cups spiral pasta (about 200g)
- 1/2 cup grated cheese
Method
- Heat oil in a large frying pan and brown the mince.
- Add onion and spinach, and cook until the onion has softened.
- Add garlic, Italian herbs, chilli flakes, tomato paste and canned tomatoes; mix well.
- Pour in stock, milk, and pasta; stir to combine, then bring to a boil.
- Reduce heat to medium, and cook until the liquid has absorbed and the pasta is cooked, stirring every few minutes.
- Scatter over cheese and let it melt, then serve.
Notes
Nice with a fresh salad and garlic bread. Can use chicken mince, or use any shape of pasta, or add capsicum or courgette or Worcestershire sauce, or add a swirl of yoghurt at the end, or use nondairy milk and cheese.
