One Pot Mince and Pasta

Ingredients

  • 1 tablespoon olive oil
  • 500g beef mince
  • 1 onion, diced
  • 1 handful baby spinach (optional)
  • 3 cloves garlic, crushed
  • 1 tablespoon Italian herbs
  • 1/2 teaspoon chilli flakes (optional)
  • 1 tablespoon tomato paste
  • 400g can crushed tomatoes
  • 2 cups beef stock
  • 1 cup milk
  • 2 cups spiral pasta (about 200g)
  • 1/2 cup grated cheese

Method

  1. Heat oil in a large frying pan and brown the mince.
  2. Add onion and spinach, and cook until the onion has softened.
  3. Add garlic, Italian herbs, chilli flakes, tomato paste and canned tomatoes; mix well.
  4. Pour in stock, milk, and pasta; stir to combine, then bring to a boil.
  5. Reduce heat to medium, and cook until the liquid has absorbed and the pasta is cooked, stirring every few minutes.
  6. Scatter over cheese and let it melt, then serve.

Notes

Nice with a fresh salad and garlic bread. Can use chicken mince, or use any shape of pasta, or add capsicum or courgette or Worcestershire sauce, or add a swirl of yoghurt at the end, or use nondairy milk and cheese.
