Korean Mince

Ingredients

  • 1 tablespoon sesame oil
  • 1 onion, finely diced
  • 1 carrot, finely diced
  • 500g lean beef mince
  • 2 teaspoons crushed garlic
  • 1 tablespoon crushed ginger
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon cornflour
  • 1 beef oxo cube OR 1 1/2 teaspoons stock powder OR 1/2 cup beef stock
  • 1/2 cup boiling water
  • Cooked white rice
  • Sriracha sauce (optional)
  • Spring onion, chopped finely

Method

  1. Heat sesame oil in a large frying pan, then add the onion and carrot. Cook for 5 minutes while stirring.
  2. Add mince and break up with a spoon. Cook for 5-10 minutes until browned all over.
  3. Add garlic and ginger, stir through, and cook until fragrant.
  4. Mix soy sauce, brown sugar, vinegar, and cornflour in a small jug. Pour over the mince and stir through.
  5. Dissolve the Oxo cube or stock powder in boiling water, the pour into the pan.
  6. Simmer for a few minutes until the sauce thickens up, then season to taste.
  7. Serve on white rice with a swirl of Sriracha sauce if desired; garnish with spring onion.

Notes

Nice with a swirl of Kewpie mayonnaise as well, and with half sweet soy sauce and half ordinary soy sauce. Can use pork or chicken mince. Can add capsicum or zucchini, or serve with shredded cabbage.
