Chicken Fajitas

Ingredients

  • 2 chicken breasts, finely sliced
  • 1 red onion, finely sliced
  • 1 red capsicum, sliced
  • 1 red chilli, finely sliced (optional)
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground coriander
  • pinch ground cumin
  • 2 cloves garlic, crushed
  • 4 tablespoons olive oil
  • 1 lime, juiced
  • 4-5 drops Tabasco sauce
  • 8 medium tortillas
  • mixed salad
  • 230g fresh salsa
  • Salt & Pepper

Method

  1. Heat oven to 200C; wrap tortillas in foil
  2. Mix smoked paprika, coriander, cumin, garlic cloves, olive oil, lime juice and Tabasco sauce in a bowl with a pinch each of salt & pepper
  3. Stir chicken, onion, capsicum and chilli into marinade
  4. Heat a griddle pan until smoking, then add chicken and marinade
  5. Cook over high heat for about 5 minutes, moving with tongs, until nicely charred
  6. Check chicken is cooked through. Cook in smaller batches if required
  7. Heat tortillas in warm oven
  8. Remove, then fill with chicken, mixed salad and salsa
