Spice-Crusted Baby Potatoes
Ingredients
- 1kg baby new potatoes, scrubbed
- 1 tablespoon coriander seeds
- 1 tablespoon cumin seeds
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 1 teaspoon celery salt or sea salt
- 3 tablespoons olive oil
- 1 tablespoon white wine vinegar
- aoli, to serve
Method
- Preheat oven to 220 degrees Celcius
- Par-boil potatoes for 5 minutes in enough salted water to cover. Drain and leave to cool. Dry with a clean cloth
- Grind coriander and cumin seeds in a mortar or spice grinder. Mix with remaining spices and salt
- Whisk oil, vinegar and spices together in a bowl
- Place potatoes on a large baking sheet, pour over the oil mixture, and toss well to coat evenly
- Bake for 15-20 minutes until tender
- Pierce with cocktail sticks, and dip into aoli
