Pork Sausage, Olive and Mushroom One Pot Meal

Ingredients

  • 400g pork sausages
  • 200g mushrooms, halved
  • 1 red capsicum, sliced
  • 2 cloves of garlic, crushed
  • 1/4 cup black olives, sliced
  • 1 tsp oregano
  • 400g can crushed tomatoes
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • basil to garnish

Method

  1. Place a large frying pan over medium heat
  2. Pull sausage meat out of casing in small pieces and add to the pan
  3. Fry for 5 minutes until brown on all sides
  4. Add the mushrooms and capsicums, and cook for 2 minutes
  5. Stir in the garlic, then oregano and olives
  6. Add the tomatoes, and stir to deglaze
  7. Cover, and simmer for 10 minutes, stirring after 5 minutes to prevent sticking
  8. Stir in the sugar and salt, then simmer for another 10 minutes, uncovered until sauce is reduced
  9. Garnish with basil
  10. Serve with mashed potato, rice, or couscous (eg with orange zest, parsley & chopped apricots)
