Pork Sausage, Olive and Mushroom One Pot Meal
Ingredients
- 400g pork sausages
- 200g mushrooms, halved
- 1 red capsicum, sliced
- 2 cloves of garlic, crushed
- 1/4 cup black olives, sliced
- 1 tsp oregano
- 400g can crushed tomatoes
- 1/2 tsp sugar
- 1/2 tsp salt
- basil to garnish
Method
- Place a large frying pan over medium heat
- Pull sausage meat out of casing in small pieces and add to the pan
- Fry for 5 minutes until brown on all sides
- Add the mushrooms and capsicums, and cook for 2 minutes
- Stir in the garlic, then oregano and olives
- Add the tomatoes, and stir to deglaze
- Cover, and simmer for 10 minutes, stirring after 5 minutes to prevent sticking
- Stir in the sugar and salt, then simmer for another 10 minutes, uncovered until sauce is reduced
- Garnish with basil
- Serve with mashed potato, rice, or couscous (eg with orange zest, parsley & chopped apricots)
