Salmon and Potato Cakes
Ingredients
- 4 medium-sized potatoes
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 200g hot smoked salmon, flaked into large chunks
- 2 spring onions, finely chopped
- handful of Italian parsley
- 1 tablespoon wholegrain mustard
- 1/4 cup olive oil
- 3 tablespoons white wine vinegar
- squeeze of lemon juice
- salt & pepper
Method
- Boil potatoes in salted water until soft, then drain well
- Mash with 1 tablespoon of oil, flour and baking powder, salt and pepper
- Stir through the salmon and spring onion
- Divide into six balls, then flatten into thick patties and dust with extra flour
- Combine remaining ingredients (eg in a small food processor) to make a dressing; add more seasoning if required
- Heat 2cm of oil in a large frying pan on high, and fry patties until golden brown
- Garnish with dill sprigs, and serve with lemon wedges, salad, and dressing on the side
Notes
Can cook and mash potatoes, then add salmon, parsley, mustard, lemon juice and salt and pepper, and form patties.
