Baked kumara with orange

Ingredients

  • 2 kumara, peeled
  • 2 oranges, peeled and sliced
  • Juice from 1 orange
  • 2 tablespoons brown sugar
  • 1 teaspoon cornflour
  • 25g butter

Method

  1. Cook kumara, then slice
  2. Arrange in a baking dish
  3. Top with a slice of orange for every 2-3 kumara slices
  4. Mix orange juice, sugar, butter and cornflour together
  5. Pour over kumara
  6. Bake at 180C for 20-30 minutes
