Kumara Salad
Ingredients
- 1kg kumara, preferable golden
- 2 streaky bacon rashers
- 1 orange, skinned, segmented, and chopped
- 1/2 cup raisins
- 1 small red onion, finely chopped
- parsley
- mayonnaise
Method
- Peel kumara, and cook until just tender. Cool slightly, then cube
- Fry bacon until very crisp; cool, then crumble
- Pour hot bacon fat over warm kumara and toss
- When cool, add bacon, orange, raising, onion and celery to kumara
- Mix with enough mayonnaise to bind
- Sprinkle with chopped parsley
