Kumara Salad

Ingredients

  • 1kg kumara, preferable golden
  • 2 streaky bacon rashers
  • 1 orange, skinned, segmented, and chopped
  • 1/2 cup raisins
  • 1 small red onion, finely chopped
  • parsley
  • mayonnaise

Method

  1. Peel kumara, and cook until just tender. Cool slightly, then cube
  2. Fry bacon until very crisp; cool, then crumble
  3. Pour hot bacon fat over warm kumara and toss
  4. When cool, add bacon, orange, raising, onion and celery to kumara
  5. Mix with enough mayonnaise to bind
  6. Sprinkle with chopped parsley
