Lemon Roast Potatoes

Ingredients

  • 4 medium potatoes, peeled and cut into eighths
  • 1/2 cup lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon butter

Method

  1. Parboil potatoes for 3 minutes; drain well
  2. Heat oil, lemon juice and butter in a baking dish in a hot oven (200C)
  3. Tip potatoes into the dish, and baste with the liquid
  4. Bake for 15-20 minutes, until golden

Notes

Can add garlic to the liquid
