Lemon Roast Potatoes
Ingredients
- 4 medium potatoes, peeled and cut into eighths
- 1/2 cup lemon juice
- 3 tablespoons olive oil
- 1 tablespoon butter
Method
- Parboil potatoes for 3 minutes; drain well
- Heat oil, lemon juice and butter in a baking dish in a hot oven (200C)
- Tip potatoes into the dish, and baste with the liquid
- Bake for 15-20 minutes, until golden
Notes
Can add garlic to the liquid
