Bean Salad
Ingredients
- 2 cans of beans (eg berlotti, red kidney), drained
- 1 onion, chopped finely
- 1 capsicum, chopped finely
- 2 celery stalks, chopped finely
- 1 1/2 cups sugar
- 3/4 cup vinegar
- 1/2 cup water
- salt & pepper
Method
- Bring sugar, vinegar, water to a boil; cool
- Mix chopped vegetables with liquid
- Ideally marinate for 48 hours before use
