Pumpkin Soup #2
Ingredients
- 1kg pumpkin, preferable crown
- 4 1/2 cups water
- 1 onion, chopped
- 3 teaspoons chicken stock powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon brown sugar
- 1 teaspoon curry powder
- 1 cup milk
Method
- Peel pumpkin and cut into pieces
- Put into large saucepan with water, onion, stock power and s&p
- Bring to a boil, then simmer until pumpkin is soft
- Blend until smooth, ideally with a stick blender
- Mix curry powder and brown sugar into milk
- Add mixture to saucepan, and heat gently; do not boil
Notes
Can use any type of milk, or UHT cream
