Pumpkin Soup #2

Ingredients

  • 1kg pumpkin, preferable crown
  • 4 1/2 cups water
  • 1 onion, chopped
  • 3 teaspoons chicken stock powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon brown sugar
  • 1 teaspoon curry powder
  • 1 cup milk

Method

  1. Peel pumpkin and cut into pieces
  2. Put into large saucepan with water, onion, stock power and s&p
  3. Bring to a boil, then simmer until pumpkin is soft
  4. Blend until smooth, ideally with a stick blender
  5. Mix curry powder and brown sugar into milk
  6. Add mixture to saucepan, and heat gently; do not boil

Notes

Can use any type of milk, or UHT cream
