Flourless rich chocolate cake

Ingredients

  • 175g unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 tsp vanilla essence
  • 6 eggs, separated
  • 150g cooking chocolate, melted
  • 2 x 70g packets ground almonds
  • icing sugar
  • whipped cream

Method

  1. Cream butter, sugar, and vanilla until light and fluffy
  2. Beat in egg yolks
  3. Fold in melted chocolate and almonds
  4. In another bowl, beat egg whites until soft peaks form
  5. Gradually fold in whites into chocolate mixture
  6. Pour into a greased and lined 20cm spring-form tin
  7. Bake at 190 C for 20 minutes then reduce heat to 150 C for a further 35 minutes or until firm
  8. Allow cake to cool in tin
  9. Release cake and transfer to a serving plate
  10. Dust with icing sugar and server warm or cold with cream

Notes

Try substituting the vanilla essence for 2 tsp chocolate, coffee or orange liqueur.
