Lemon Curd
Ingredients
- 3 eggs
- 1 cup sugar
- 1 tsp chopped lemon rind
- 1/2 cup lemon juice
- 50g butter, chopped
Method
- Place eggs and sugar into a large microwave-safe jug or bowl (about 2L)
- Beat well, then add lemon rind & juice and butter
- Microwave in 1-minute increments, stirring each time, until thick (~9mins)
- Pour into hot dry jars and seal
Notes
Can use 6 egg yolks instead; can use other citrus juices
