Microwave Hollandaise Sauce
Ingredients
- 1/4 cup butter (57g)
- 2 egg yolks
- 2 tsp lemon juice
- 1/8 tsp salt
- 1/8 tsp cayenne pepper
Method
- Melt butter in microwave in a small dish
- Whisk egg yolks with lemon juice, salt, and cayenne pepper in a microwave-safe bowl
- Gradually whisk in melted butter to form an emulsion
- Microwave on Medium for 10 seconds and whisk
- Continue microwaving in 5 second bursts until thickened
Notes
Can add 1 tablespoon of mayonnaise for more creaminess
