Microwave Hollandaise Sauce

Ingredients

  • 1/4 cup butter (57g)
  • 2 egg yolks
  • 2 tsp lemon juice
  • 1/8 tsp salt
  • 1/8 tsp cayenne pepper

Method

  1. Melt butter in microwave in a small dish
  2. Whisk egg yolks with lemon juice, salt, and cayenne pepper in a microwave-safe bowl
  3. Gradually whisk in melted butter to form an emulsion
  4. Microwave on Medium for 10 seconds and whisk
  5. Continue microwaving in 5 second bursts until thickened

Notes

Can add 1 tablespoon of mayonnaise for more creaminess
