Falafel

Ingredients

  • 1/2 red onion
  • 400g tin of chickpeas, drained and rinsed
  • 2-3 garlic cloves/1 Tbsp crushed garlic
  • 1/4 cup parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 3 Tbsp flour

Method

  1. Blitz all the ingredients in a food processor until combined. (If not blending, add 1 Tbsp water at a time).
  2. Shape into 12 walnut-sized balls, then flatten slightly.
  3. Refrigerate until ready to cook.
  4. Heat a little oil in a medium-sized cooking pan. Cook for 3-4 minutes each side until golden brown.
