Falafel
Ingredients
- 1/2 red onion
- 400g tin of chickpeas, drained and rinsed
- 2-3 garlic cloves/1 Tbsp crushed garlic
- 1/4 cup parsley
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 3 Tbsp flour
Method
- Blitz all the ingredients in a food processor until combined. (If not blending, add 1 Tbsp water at a time).
- Shape into 12 walnut-sized balls, then flatten slightly.
- Refrigerate until ready to cook.
- Heat a little oil in a medium-sized cooking pan. Cook for 3-4 minutes each side until golden brown.
