HF Parmesan Chicken Strips
Ingredients
- 6 potatoes
- 600g green beans
- 640g chicken breast (about 4)
- 1/2 cup flour
- 2 eggs
- 110g panko breadcrumbs
- 60g grated parmesan cheese
- 100g smokey aioli
- olive oil
- salt & pepper
Method
- Preheat oven to 220C or 200C fan-forced
- Cut unpeeled potato into 2cm chunks
- Place on an oven tray lined with baking paper, drizzle with olive oil, and season
- Toss, then roast 25-30 mins until tender
- Slice horizontally through chicken breasts to make two steaks, then cut lengthwise into 2cm strips
- Place flour and a good pinch of salt & pepper into a shallow bowl
- Place breadcrumbs and cheese into another shallow bowl; mix
- Break eggs into another shallow bowl and whisk
- Dip chicken strips into flour then egg then breadcrumbs; lay on a plate
- Heat frying pan over medium-high heat
- Top and tail beans; add to pan with a splash of water and cook 4-5 mins until tender
- Transfer to a plate and cover with foil to keep warm
- Return pan to heat and add enough olive oil to coat the base
- When oil is hot, add some chicken strips and fry for 2-3 mins each side until golden and cooked
- Transfer to a plate lined with paper towel; continue until all strips are cooked
- Divide up potatoes, beans and chicken strips between plates; serve with smokey aioli
