Cashew Crumble Topping

Ingredients

  • 1 cup cashews, toasted
  • 1/2 cup fresh breadcrumbs
  • 2 tablespoons chopped parsley
  • 1 clove garlic
  • 2 teaspoons cumin powder
  • 1 teaspoon dried thyme
  • 1 teaspoon curry powder
  • 1 teaspoon sea salt with kelp
  • 2 tablespoons extra-virgin olive oil

Method

  1. Process all ingredients except oil until medium fine
  2. Add oil; briefly pulse to combine

Notes

  • store in a glass jar and refrigerate
  • sprinkle over roasted pumpkin or other cooked vegetables
