Green Bean Salad with Mint
Ingredients
- 500g young green beans
- 1/2 cup mint leaves, roughly chopped
- 1 large clove garlic, crushed
- 4 tablespoons olive oil
- juice of 1 lemon
- salt & pepper
Method
- Top and tail beans
- Drop into a pan of boiling salted water and cook about 8 mins, until tender; drain
- Add to a bowl with the mint and garlic
- Add oil and lemon juice, with salt & pepper to taste; toss thoroughly

- can serve at room temperature or hot
