Curried Kumara & Orange Salad

Ingredients

  • 500g kumara
  • 1/4 cup diced red capsicum
  • 1 small orange, peeled & segmented
  • 1/4 cup sultanas
  • 1/4 cup shredded coconut, toasted
  • 1/3 cup roasted peanuts
  • 1 spring onion, chopped
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 3/4 teaspoon curry powder
  • 1 tablespoon lemon juice
  • salt & pepper

Method

  1. Microwave washed but unpeeled kumara until tender
  2. Cool, then peel and cut into 2cm cubes; place in a large bowl
  3. Add orange, sultanas, coconut, peanuts and spring onion to the bowl
  4. Combine mayonnaise, sour cream, curry powder, lemon juice and salt & pepper to taste
  5. Pour dressing over salad and toss lightly

Notes

  • garnish with extra sultanas and coconut, and a small segmented orange
  • can peel kumara then bake in the oven
  • perfectly fine without the orange
