Curried Kumara & Orange Salad
Ingredients
- 500g kumara
- 1/4 cup diced red capsicum
- 1 small orange, peeled & segmented
- 1/4 cup sultanas
- 1/4 cup shredded coconut, toasted
- 1/3 cup roasted peanuts
- 1 spring onion, chopped
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 3/4 teaspoon curry powder
- 1 tablespoon lemon juice
- salt & pepper
Method
- Microwave washed but unpeeled kumara until tender
- Cool, then peel and cut into 2cm cubes; place in a large bowl
- Add orange, sultanas, coconut, peanuts and spring onion to the bowl
- Combine mayonnaise, sour cream, curry powder, lemon juice and salt & pepper to taste
- Pour dressing over salad and toss lightly
Notes
- garnish with extra sultanas and coconut, and a small segmented orange
- can peel kumara then bake in the oven
- perfectly fine without the orange
