Seared Lemon Chicken
Ingredients
- 2 tablespoons olive oil
- 4 x 100g chicken breast fillets
- 1 tablespoon lemon juice
- 2 garlic cloves, crushed
- 1 teaspoon clear honey
- 1 tablespoon balsamic vinegar
- 2 tablespoons chopped flat-leaf parsley
- zest of 1 lemon
Method
- Place chicken breasts as a single layer in a shallow dish
- Mix lemon juice, garlic, honey, balsamic vinegar & 1 tablespoon of parsley with 1 tablespoon of olive oil
- Pour over chicken, turning breasts over until well coated
- Marinate in the fridge for 30 minutes
- Brush a nonstick griddle pan with 1 tablespoon olive oil; heat until very hot
- Remove chicken from marinade (reserve marinade) and add to the pan
- Sear for 1-2 minutes on each side until brown
- Lower heat, add marinade, and cook for 10 minutes until cooked through, turning once or twice
- Remove chicken and arrange on serving plates
- Grate lemon zest over, and sprinkle with remaining parsley
