Ginger Fish & Sassy Vegetables
Ingredients
- 4 fish fillets, skinned & boned
- 2 teaspoons paprika
- 1 teaspoon ground ginger
- 2 teaspoons garlic salt
- 1 cup dried breadcrumbs
- 1/4 cup sesame seeds
- 125g ghee
- 50g ghee
- 2 cloves garlic, crushed
- 2cm piece ginger, peeled & grated
- 1 carrot, cut into sticks
- 4 courgettes, cut into quarters
- 10 beans, topped & tailed
- 1/4 cup water
Method
- Cut fish into 10cm lengths
- Mix paprika, ginger, garlic, salt, breadcrumbs & sesame seeds in a bowl
- Melt first measure of ghee
- Dip fish into clarified butter then breadcrumb mixture
- Place on a baking tray, and bake about 30mins at 180C
- Melt second measure of ghee in same pan
- Add garlic and ginter; fry for a minute
- Add veges; fry for a minute
- Add water, cover pan; cook for 3 minutes
- Serve veges with the fish sticks
