Oriental Carrot Salad
Ingredients
- 350g carrots, peeled and finely grated
- 3 tablespoons peanut oil
- 1/2 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, sliced
- 1 dried red chilli, seeded and crushed
- 2 tablespoons lemon juice
- 1 teaspoon sugar
- 55g (1/2 cup) raw peanuts, toasted and chopped
- salt and pepper
Method
- Put carrots into a large bowl
- Heat 1 tablespoon of peanut oil with the sesame oil
- Fry the ginger, garlic and chilli until just golden
- Whisk in remaining oil, lemon juice and sugar
- Pour over the carrots and add the nuts
- Toss until combined, then cover & marinate for 30 minutes
- Stir, then season to taste
