Oriental Carrot Salad

Ingredients

  • 350g carrots, peeled and finely grated
  • 3 tablespoons peanut oil
  • 1/2 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, sliced
  • 1 dried red chilli, seeded and crushed
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar
  • 55g (1/2 cup) raw peanuts, toasted and chopped
  • salt and pepper

Method

  1. Put carrots into a large bowl
  2. Heat 1 tablespoon of peanut oil with the sesame oil
  3. Fry the ginger, garlic and chilli until just golden
  4. Whisk in remaining oil, lemon juice and sugar
  5. Pour over the carrots and add the nuts
  6. Toss until combined, then cover & marinate for 30 minutes
  7. Stir, then season to taste
