Lemon and GInger Cooler
Ingredients
- 140g ginger root, unpeeled, sliced
- 1 1/2 cups sugar
- 1/2 cup lemon juice
- zest of 1 lemon
- chilled soda water
Method
- Combine ginger, sugar, lemon juice and lemon peel in a saucepan
- Bring to the boil, stirring until the sugar has dissolved
- Simmer for about 15 minutes until reduced and syrupy
- Cool, then strain and bottle
- Add 2 tablespoons of syrup to a glass, add soda water, then stir and add ice
