Lemon and GInger Cooler

Ingredients

  • 140g ginger root, unpeeled, sliced
  • 1 1/2 cups sugar
  • 1/2 cup lemon juice
  • zest of 1 lemon
  • chilled soda water

Method

  1. Combine ginger, sugar, lemon juice and lemon peel in a saucepan
  2. Bring to the boil, stirring until the sugar has dissolved
  3. Simmer for about 15 minutes until reduced and syrupy
  4. Cool, then strain and bottle
  5. Add 2 tablespoons of syrup to a glass, add soda water, then stir and add ice
