Avocado Chicken Salad

Ingredients

  • 2 large chicken breasts, shredded or chopped (or a rotisserie chicken)
  • 3 medium/2 large avocados
  • 1 cup corn, or kernels from 1 cooked cob
  • 170g bacon, cooked and chopped
  • 1/4 cup chives or spring onion, chopped
  • 2 tablespoons chopped dill
  • 2 hard-boiled eggs, halved or quartered (optional)
  • 3 tablespoons lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon sea salt
  • 1/8 teaspoon black pepper

Method

  1. Place chicken, bacon, corn, chives/spring onion and dill in a bowl
  2. Peel and pit avocados, then chop into bite-sized pieces and add to bowl
  3. Put lemon juice, olive oil, salt and pepper in a small jar
  4. Shake to combine, drizzle over salad, and toss
  5. Top with egg
