Traditional Coleslaw

Ingredients

  • 1/4 red or green cabbage, finely sliced
  • 2 large carrots, finely grated
  • 1/2 cup parsley, finely chopped
  • 1 cup raw cashew nuts
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1/2 clove garlic
  • 1 tablespoon maple syrup
  • juice of 1 lemon
  • 1/2 teaspoon salt
  • 1/2 cup water

Method

  1. Combine cashew nuts, apple cider vinegar, olive oil, garlic, maple syrup, lemon juice, salt and water in a high-speed blender
  2. Process until smooth and creamy, adding a little more water if needed
  3. Place veges in a bowl, add how much dressing you like, then mix well
