Traditional Coleslaw
Ingredients
- 1/4 red or green cabbage, finely sliced
- 2 large carrots, finely grated
- 1/2 cup parsley, finely chopped
- 1 cup raw cashew nuts
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 1/2 clove garlic
- 1 tablespoon maple syrup
- juice of 1 lemon
- 1/2 teaspoon salt
- 1/2 cup water
Method
- Combine cashew nuts, apple cider vinegar, olive oil, garlic, maple syrup, lemon juice, salt and water in a high-speed blender
- Process until smooth and creamy, adding a little more water if needed
- Place veges in a bowl, add how much dressing you like, then mix well
