Broccoli Salad #1

Ingredients

  • 2 medium broccoli heads, chopped
  • 1 large carrot, grated
  • 1 apple, cored and finely chopped
  • ¼ cup onion, finely chopped
  • ½ cup walnuts, coarsely chopped
  • ¼ cup dried cranberries
  • 1 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon raw honey (optional)

Method

  1. Mix mayonnaise, lemon juice, garlic and honey in a small bowl
  2. Combine broccoli, carrot, apple, onion, walnute and cranberries in a large bowl
  3. Mix as much dressing as you like into the salad; toss well
  4. Serve immediately, or refrigerate before serving

Notes

Can use raisins or currants instead of cranberries. Can roast the walnuts for 4-5 minutes before chopping. Can use plain yogurt for some of the mayonnaise. Can chop the broccoli very finely, and grate the onion and apple.
