Broccoli Salad #1
Ingredients
- 2 medium broccoli heads, chopped
- 1 large carrot, grated
- 1 apple, cored and finely chopped
- ¼ cup onion, finely chopped
- ½ cup walnuts, coarsely chopped
- ¼ cup dried cranberries
- 1 cup mayonnaise
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 teaspoon raw honey (optional)
Method
- Mix mayonnaise, lemon juice, garlic and honey in a small bowl
- Combine broccoli, carrot, apple, onion, walnute and cranberries in a large bowl
- Mix as much dressing as you like into the salad; toss well
- Serve immediately, or refrigerate before serving
Notes
Can use raisins or currants instead of cranberries. Can roast the walnuts for 4-5 minutes before chopping. Can use plain yogurt for some of the mayonnaise. Can chop the broccoli very finely, and grate the onion and apple.
