Fish Pie

Ingredients

  • 1 onion
  • 1 carrot
  • 300ml cream
  • grated cheese, about 2 handfuls
  • 4 medium potatoes
  • 1lb fish, e.g. white fish alone or mixed with smoked fish or shellfish
  • 1 tsp English mustard
  • salt and pepper
  • parsley, about a handful
  • juice of 1 lemon
  • 2 eggs (optional)
  • butter
  • nutmeg

Method

  1. Boil potatoes (with eggs for 5 mins if using) in salted water until tender.
  2. Mash potatoes with butter, nutmeg, salt and pepper.
  3. Saute onion and carrot in a little oil in a deep-sided frying pan until tender.
  4. Pour in cream; bring to the boil.
  5. Add cheese; melt
  6. Add mustard, parsley, lemon juice, salt and pepper
  7. Lay fish in an ovenproof dish, with peeled and sliced eggs
  8. Pour sauce over; top with mashed potatoes
  9. Bake at 230C for 25 minutes, until golden and bubbling

Notes

Serves 4. Also nice with some cooked pumpkin, peas, corn etc
