Fish Pie
Ingredients
- 1 onion
- 1 carrot
- 300ml cream
- grated cheese, about 2 handfuls
- 4 medium potatoes
- 1lb fish, e.g. white fish alone or mixed with smoked fish or shellfish
- 1 tsp English mustard
- salt and pepper
- parsley, about a handful
- juice of 1 lemon
- 2 eggs (optional)
- butter
- nutmeg
Method
- Boil potatoes (with eggs for 5 mins if using) in salted water until tender.
- Mash potatoes with butter, nutmeg, salt and pepper.
- Saute onion and carrot in a little oil in a deep-sided frying pan until tender.
- Pour in cream; bring to the boil.
- Add cheese; melt
- Add mustard, parsley, lemon juice, salt and pepper
- Lay fish in an ovenproof dish, with peeled and sliced eggs
- Pour sauce over; top with mashed potatoes
- Bake at 230C for 25 minutes, until golden and bubbling
Notes
Serves 4. Also nice with some cooked pumpkin, peas, corn etc
