Fish with Thai Flavourings
Ingredients
- 2 tablespoons fish sauce
- ¼ teaspoon salt
- ½ cup lime juice
- 2 bulbs lemongrass
- 1-2 red chillis
- spring onions, bunch
- 4 kaffir lime leaves
- 700g fish fillets
- 3 tablespoons flour
- oil
- lettuce leaves
- ½ cup coriander leaves
- ½ cup mint leaves
Method
- Whisk fish sauce, salt and lime juice together in a small bowl
- Trim lemongrass, then smash to reveal pulp; chop only the pulp
- Slice chillis, removing seeds if preferred
- Slice white parts of the spring onions
- Shred lime leaves
- Add lemongrass, chillis, spring onions and lime leaves to dressing
- Rinse fish and pat dry; cut into manageable pieces and dust with flour
- Make a bed of torn lettuce leaves on a platter
- Top with coriander leaves
- Fry fish in hot oil until almost cooked through
- Place fish on top of the platter as it is cooked
- Whisk dressing and spoon over fish
- Scatter with chopped mint leaves
