Gingerbread

Ingredients

  • 125g butter
  • 100g (1/2 cup) brown sugar
  • 125mL (1/2 cup) golden syrup
  • 1 egg, separated
  • 275g (2 1/2 cups) flour
  • 1 tbsp ginger
  • 1 tsp mixed spice
  • 1 tsp sodium bicarbonate

Method

  1. Heat oven to 180°C; grease 2 oven trays
  2. Beat butter and sugar until pale
  3. Add golden syrup and egg yolk; beat
  4. Stir in flour, ginger, spice and sodium bicarbonate
  5. Turn onto a lightly floured surface and knead until smooth
  6. Press into a disc; cover with plastic wrap and refrigerate about 30 mins
  7. Roll into dough between baking paper until 4mm thick
  8. Cut out shapes; place on trays 3cm apart
  9. Bake about 10 mins until brown
  10. Cool on a rack

Icing

  1. Beat egg white until soft peaks form
  2. Gradually add 1cup icing sugar until stiff peaks form (may need more icing sugar)
