Gingerbread
Ingredients
- 125g butter
- 100g (1/2 cup) brown sugar
- 125mL (1/2 cup) golden syrup
- 1 egg, separated
- 275g (2 1/2 cups) flour
- 1 tbsp ginger
- 1 tsp mixed spice
- 1 tsp sodium bicarbonate
Method
- Heat oven to 180°C; grease 2 oven trays
- Beat butter and sugar until pale
- Add golden syrup and egg yolk; beat
- Stir in flour, ginger, spice and sodium bicarbonate
- Turn onto a lightly floured surface and knead until smooth
- Press into a disc; cover with plastic wrap and refrigerate about 30 mins
- Roll into dough between baking paper until 4mm thick
- Cut out shapes; place on trays 3cm apart
- Bake about 10 mins until brown
- Cool on a rack
Icing
- Beat egg white until soft peaks form
- Gradually add 1cup icing sugar until stiff peaks form (may need more icing sugar)
