Gluten-Free Peanut Butter Cookies

Ingredients

  • 2 eggs
  • 2 cups extra-crunchy peanut butter
  • 1 cup icing sugar
  • 1 cup white sugar
  • ½ tsp vanilla essence

Method

  1. Preheat oven to 170°C.
  2. Cover a baking tray with non stick baking paper.
  3. Mix all ingredients until well combined.
  4. Drop spoonfuls onto the prepared tray and flatten with a wet fork.
  5. Bake for 15 – 20 minutes.
  6. Cool on a wire rack and store in an airtight container.

Makes approximately 16-20 large cookies
