Chilli
Ingredients
- oil
- 1 onion, chopped finely
- 1 stick celery, chopped finely
- 1 small carrot, chopped finely
- 3 or 4 cloves of garlic
- 125g mince (opt)
- 400g tin of mexican beans
- 400g tin of chopped tomatoes
- 1Tablespoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon turmeric
- ½ teaspoon cayenne pepper
- 1 teaspoon ground coriander seeds
- spring onions, chopped finely
Method
- Add your oil to a pot.
- Fry onion, celery, carrot and garlic on a slow heat until the onion and celery goes see-though. Wait until it goes soft and kind of mushy if you can be bothered.
- Add the mince if you are using; brown.
- Add the beans and tomatoes, the spices (adjust to your taste) and the spring onions.
- Bring to a simmer; heat through.
Notes
Serves about four people on baked potatoes, nachos, or in wraps.
