Mocha Fruit Cake
Ingredients
- 1 kg Christmas cake fruit mix
- 2 cups strong black coffee or orange juice
- 150g fruit and nut chocolate, roughly chopped
- 2 cups self-raising flour
Method
- Soak fruit overnight in coffee or fruit juice
- Grease a 20cm cake tin, line bottom with baking paper
- Mix together fruit, chocolate and flour
- Spoon into tin
- Bake for 50-60 min at 180 deg C or until cooked
Notes
Individual serves could be made in Texas muffin tins or the like; they don't take as long to cook!
