Mocha Fruit Cake

Ingredients

  • 1 kg Christmas cake fruit mix
  • 2 cups strong black coffee or orange juice
  • 150g fruit and nut chocolate, roughly chopped
  • 2 cups self-raising flour

Method

  1. Soak fruit overnight in coffee or fruit juice
  2. Grease a 20cm cake tin, line bottom with baking paper
  3. Mix together fruit, chocolate and flour
  4. Spoon into tin
  5. Bake for 50-60 min at 180 deg C or until cooked

Notes

Individual serves could be made in Texas muffin tins or the like; they don't take as long to cook!
