Kumara Soup
Ingredients
- 2 roughly chopped and peeled kumaras
- 1/2 medium carrot, chopped
- 1 tsp green curry paste
- 1 chopped onion (Opt)
- 1 chopped spring onion
- 1 sprig chopped coriander
- I large sprig chopped parsley
- salt and pepper
- 1 tsp curry powder
- 1 can coconut milk
- 500 ml chicken or vegetable stock
Method
- Put all vegetables into a large pot and cover with the stock.
- Bring to the boil and then simmer until all veges are cooked.
- Drain off liquid, reserving about 2 tablespoons.
- Blend veges in food processor/blender with herbs, curry powder, seasoning, curry paste and reserved liquid.
- Add the coconut milk a little at a time until soup is the required consistency
